Options do not delete on
/administrator/index.php?option=com_j2store&view=option&task=edit&id=xx
I tried deleting (in two places) in the db, but it just leaves a spaces in the options dropdown ion the front end.

Sarah,
options can be deleted, unless they are used by products.
Now that the options are deleted in the database, you may need to go through each product that used it to ensure the option is removed from that product.

Sorry, I should have said 'Option Values' do not delete. I can now see the serror message at the top, it just did not scroll to it so it just appeared to do nothing.
I think this is something that should be looked at in time: at the moment you need to remove the option from all products, delete the option value, then reinstate the option on all the products. Luckily I have only one, so it was no big deal, but if you had a 50 or 300 products, it would be a nightmare.
