With the Stripe payment plugin, no payment description is provided during the payment process. However, we need this for our accounting. How can we include it in the transaction?

I was thinking to add the description when sending information to Stripe (so it is visible at Stripe's - as I think this is what you are asking for). Right now, the order id is sent as metadata.
It would show, in the description column of the Stripe transactions:
Order 17785661621 - Invoice INV-21

yes, that sounds good and is more than enough.
I have done some testing and (something I forgot) the invoice number is set AFTER the transaction with Stripe so it can't be added to the description at the time of the purchase...

that's no big deal. The customer name might still appear there. In our invoicing program, the description field can't be left blank.
