hey guys..
not sure whats the deal with my j2commerce installation is, but it seems i cannot create any variable products?
any ideas?

I logged in and it looks like all the products are simple products. I added a new Flexible Variant product under the fudge but didn't finish it as I realized you haven't created any options for the variants to use yet.
I would recommend starting here (creating Options):

and then here :Flexible Variant product
https://docs.j2commerce.com/j2commerce/product-types/flexible-variable-product
Let me know how it goes after these items and we are here for assistance.

It's been so long for me since I been in the J2Store / J2Commerce.. forgot the FLOW of things.. I need to get reaquainted BIG TIME.
Perhaps I can help you guys when I get my head back into the "game"
I'm good at the moment.. but looking for all the helper apps for layout, content , containers , bootstrap plus.. etc.. when you guys are able to get around to it.

Glad to help and we should be releasing the new advanced checkout and advanced sidebar cart soon.
We have also been creating multiple Guided Tours that will be released in 4.1 that will literally show anybody how to create each different type of product. If you weren't able to figure it out without openeing a ticket, that's not on you, it's on us. We will continue to work on this until "uncle Frank" in Kansas is able to throw up a store.
