I want to offer a 20% discount for one month on some products in the catalog without using coupons, how should I proceed?

Hello Antonio,
go to each product you want to offer a discount for.
Enter the 'J2Store/J2Commerce' tab, then the 'Pricing' tab.
Select the button next to 'Advanced pricing'.
There you will have options to propose different pricing for our product.
